Beets; you either love them or haven’t tried them in this fresh hummus creation. Hummus might seem intimidating to make, but if you have a food processor, it practically makes itself. Plus, it’s so much easier to snack on raw vegetables when you have a pretty, delicious and nourishing roasted beet hummus at your fingertips!

Before we jump into how to create this beauteous hummus, I’d like to point out how much beets do for our bodies.

raw cashews

I recommend buying unsalted and unroasted raw cashews when making this beet hummus. This is so you can avoid consuming any added salt and oils.

unsweetened tahini

Did you know that tahini is simply sesame seeds ground into a nut butter? When I realized that, my mind was blown away! Be sure to purchase unsweetened, creamy tahini – I love the brand Once Again!

beets are a must in this nourishing roasted beet hummus! They create the beautiful pink hue and add flavors of sweetness, earthiness and the utmost freshness. I like to roast beets with avocado oil and apple cider vinegar for superb flavor. Additionally, avocado oil can withstand high heat because of its high smoke point – a must when roasting!

if you’ve never roasted a whole garlic bulb, you’ve been missing out! It’s simple to do and creates a dynamic, satisfying flavor. I like to roast my garlic and beets at the same time. Prepare for a house smelling like savory and sweet goodness.

fresh lemon

I highly recommend using only fresh lemons in this roasted beet hummus. The acid from the lemon creates that fresh pop of flavor.

Description

This simple six ingredient roasted beet hummus will have you ditching the store-bought hummus in no time. It’s both pretty and perfect to pair with crackers and raw vegetables.


Ingredients

Scale
  • 1 cup raw cashews, soaked in cold water (3 hours)
  • 2 small beets, roasted
  • 1/3 cup tahini
  • 5 roasted garlic cloves
  • 1 lemon, freshly squeezed
  • 3/4 teaspoon sea salt
  • 1/2 cup cold water 

Instructions

1. In a small bowl, add the cashews and fill with cold water until submerged. Soak for 3 hours. Rinse and drain.

2. Pre-heat the oven to 400 degrees F. Remove the beet stem, leaving about an inch so the beet doesn’t bleed. Scrub off any dirt and place each beet on a square of aluminum foil. 

3. Drizzle with avocado oil and apple cider vinegar so each beet is evenly coated. Wrap up tightly, place on a small baking dish. Roast for 50-60 minutes or until a fork pierces through easily. 

4. To roast a garlic head, place the garlic head on a square of aluminum foil. Drizzle with avocado oil and sea salt. Wrap tightly and roast with the beets for 30 minutes. 

5. Let the beets and garlic head cool to room temperature. 

6. In a food processor, add the soaked cashews, tahini, roasted garlic, roasted beets, fresh lemon and sea salt. Puree and slowly add the water until desired consistency. The hummus should be thick and creamy. 

7. Place the hummus in a bowl and garnish with chopped pistachios. Serve with crackers and raw vegetables such as carrots, celery or cauliflower. Enjoy!

Store in a sealed container in the fridge and enjoy for up to 5 days. Also makes a great spread on sandwiches!
